SALUMIFICIO – PROSCIUTTIFICIO – HAM FACTORY
The Salumificio is located in the hilly area of Modena and it’s a very pleasant drive from the B&B/city.
It is a well-known Salumificio factory in the area that supplies its products to the most famous restaurants in the city, including the Osteria Francescana.
the owner’s son, in charge for the visit, is very knowledgeable and incredibly passionate of what has been a legacy for his family. Using their specialist expertise, they continue producing prosciutto, salami, and various meat products with an authentic traditional flavour and taste. The guide will be happy to show and explain to you in great detail every step that’s taken into the production of a variety of authentic Italian cured meats. You will have the opportunity to touch some phases of the production of cured meats such as salting a ham with the assistance and supervision of an operator. At the end of the tour, you have the opportunity to taste a range of products produced in the Salumificio, accompanied by freshly made gnocchi fritti and tigelle.

DAIRY/PARMIGIANO REGGIANO CHEESE FACTORY
The visit to the dairy is certainly one of the most recommended visits in the Modena area. It is a dairy that produces organic and family-run products. The owner will accompany you on your visit, starting from the farm and the stable, then moving inside the dairy where in the morning you can witness and touch the production of Parmigiano Reggiano, immersed in the smells and fragrances of milk and caglio! After the visit to the warehouse to see the spaces where the cheeses for maturing are stored, the visit ends with a tasting of the various maturations of Parmigiano Reggiano and other dairy products.

BALSAMIC VINEGAR FACTORY
Set in a charming farm house, we would highly recommend a visit to Acetaia di Matteo. Sandra (the owner who also runs the family owned acetaia) a good friend of Paolo, shared with us the story and legacy of their family’s acetaia lineage. It was very insightful to learn about the tradition of balsamic vinegar, and how deep rooted it is in Modenese culture. We also had the privilege in tasting different types and ages of traditional balsamic vinegar of Modena. It was a truly eye-opening experience that made us appreciate the effort that goes into making each drop of this wonderful and versatile product.

LAMBRUSCO WINERY
Also in this case it is a family-run business, with an ancient history behind it, full of successes and developments that have led this reality to be one of the most important wineries in the area. The tour consists of visiting the cellar, the vineyards and explaining the various stages of winemaking. The visit ends with a beautiful and rich tasting of the wines produced by the cellar, set up in the middle of the vineyards and near the cellar.
